Goan Seafood Curry
- 2 1/4 pounds fish firm, or other seafood
- 1 whole lime
- coconut oil
- 6 sprigs fresh curry leaves
- 1 cup onion or chopped shalots
- 6 garlic cloves
- 2 tablespoons coconut sugar
- 1 11/16 cups coconut cream tins
- 2 tomatoes large
- 2 red chillies fresh
- fresh coriander
- salt
- spice Paste ==
- 1 teaspoon turmeric powder
- 2 teaspoons cumin powder
- 1 teaspoon chilli powder
- 2 teaspoons coriander powder
- 1 teaspoon mustard seeds
- 1 teaspoon ginger powder
- Marinade seafood in the juice of 1 lime with a pinch of salt for 30 minutes. In my case I used 1kg of seafood marinara mix. For fish curry something firm like tuna, swordfish or maceral would be best.
- Fry spice mix and curry leaves in a decent amount of oil
- Add shalots and garlic and fry till lightly caramalised
- Add coconut sugar and melt it down
- Add coconut milk and simmer until all flavours combine (taste test)
- Add seafood and simmer for 10 minutes
- Add chopped tomatoes, fresh chilli at the end
- Garnish with fresh coriander
