Skillet Potato Dinner(Super Easy, Super Fast, Super Good)
- 1 (10 oz.) pkg. frozen cut broccoli
- 1 1/2 c. skim milk
- 1 Tbsp. cornstarch
- 1/2 tsp. dry mustard
- 1/2 tsp. dried basil, crushed
- 1/4 tsp. pepper
- 2 c. frozen hash brown potatoes, thawed
- 1/2 lb. fully cooked ham (1 1/2 c.)
- 1/4 c. grated Parmesan cheese
- In a large skillet, cook frozen broccoli according to directions.
- Drain and set aside.
- In a small mixing bowl, stir together 2 tablespoons of skim milk, cornstarch, mustard, basil and pepper.
- In the skillet, stir the cornstarch mixture and remaining milk.
- Cook and stir over medium heat, until mixture is thick and bubbly.
- Cook and stir 2 minutes more.
- Stir in broccoli, potatoes, ham cubes and 2 tablespoons of the cheese.
- Cover and cook until the mixture is heated through, stirring occasionally. Sprinkle with remaining cheese before serving.
- Makes 4 (1 1/4-cup) servings.
