Squash Dressing
- 3 yellow squash, sliced
- 5 Tbsp. shortening
- 1 tsp. pepper
- 5 Tbsp. chopped fresh parsley
- 1/2 tsp. celery salt
- 1 c. toasted bread crumbs
- 1 Tbsp. cornmeal
- 3 zucchini squash, sliced
- 1 tsp. salt
- 4 to 5 Tbsp. chopped onion
- 1 Tbsp. chicken soup base
- 2 to 2 1/2 c. water
- 1/2 c. crushed soda crackers
- 2 eggs, beaten
- Simmer both squash in shortening 10 to 15 minutes.
- Add salt, pepper,
- onion,
- parsley,
- soup base, celery salt, water and mix well.
- Simmer 5 minutes more.
- Add bread crumbs, soda crackers and
- cornmeal.
- Mix
- well.
- Add
- the
- beaten
- eggs, stirring fast (or
- the
- egg whites will cook and you will have white pieces
- in your dressing).
- Cook a little more to thicken.
- Also taste
- to see if you need more of the ingredients or to add a
- little
- more water if the dressing is too dry.
- Put into a baking
- dish
- and bake at 350u0b0 for 10 to 20 minutes to set and
- have
- a
- nice
- light brown
- color
- like your chicken dressing has.
