Ceviche De Mayo
- 1 pound red snapper fillets cut into 1 inch pieces
- 1 teaspoon lemon
- 1 teaspoon lime zest
- lemon juice cup freshly squeezed
- lime juice cup freshly squeezed
- 1 medium tomato seeded and diced
- 1 red onion small, finely diced
- 2 tablespoons extra-virgin olive oil
- 4 cloves garlic thinly sliced
- 1 jalapeno seeded and minced
- 1 tablespoon cilantro leaves chopped fresh
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon sugar
- 1/2 teaspoon ground cumin toasted and
- 1 avocado pitted, peeled and diced
- Combine fish with citrus juice and zest in a ziplock bag and store in your refrigerator in a leak proof container. Allow to marinate for at least 3 and up to 8 hours.
- Drain marinade and combine fish in large bowl with remainder of ingredients. Chill 30 minutes and enjoy!
- Serve with tortilla chips as an appetizer for 8 or meal for 4
