Pork Tenderloin With Garlic-Cilantro Butter
- 1 1/2 pounds pork tenderloin
- 1/2 cup olive oil
- 1/4 bunch fresh cilantro chopped
- 3 tablespoons lime juice
- freshly ground black pepper
- 12 cloves garlic peeled
- 1/4 cup olive oil
- 2 cups cooked rice
- 1 teaspoon ginger grated
- 1/4 cup green onions chopped
- 1 clove garlic minced and sauteed
- 1/2 cup cashews
- 1/2 cup butter
- 1/4 cup cilantro chopped
- 2 tablespoons garlic roasted and minced
- 2 tablespoons lime juice
- Cut tenderloins crosswise into 1-inch pieces, flatten slightly. Combine next five ingredients; marinate pork in mixture four hours, refrigerated. Remove pork from marinade; panbroil in heavy skillet over medium-high heat 2-3 minutes per side. Serve atop Cashew Rice; top each serving with 1 teaspoon of Garlic-Cilantro Butter.
