Frank Rubinger'S Noodle Kugel
- 16 ounces wide egg noodles
- 16 ounces ricotta cheese
- 8 ounces cream cheese
- 16 ounces sour cream
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 1 cup granulated sugar White
- 6 large eggs Beaten
- 1 stick butter or Margarine, Melted
- 1 can mixed fruit
- 1 stick butter or Margarine, Melted
- 1/2 cup granulated sugar White
- 2 cups vanilla wafers Crushed
- 1. Preheat Oven to 350" F (175' C)
- Grease A Large 2 Inch Deep Baking Pan Or Large Casserole Dish
- Bring Large Pot Of Lightly Salted Water To A Boil Stir In Egg Noodles For 8-10 Minutes until Tender, Drain Then Put Aside
- In A Large Mixing Bowl Or Blender Combine Ricotta Cheese, Cream Cheese, Sour Cream, Vanilla & Almond Extract, Eggs, Blend Till Smooth Then Stir In Canned Fruit
- Add Stick Of Melted Butter To Noodles Stir
- Add Noodles To Cheese Mixture, Stir Till Well Blended Then Pour Mixture Into Greased Pan Spread Evenly Set Aside
- Combine Crushed Vanilla Wafers, 1/2 Cup Of Sugar,Stick Of Melted Butter Stir It Forms Crumbs Spread Over Noodle Mixture
- BaKe On 350' For 15 Minutes Then Lower Temp To 325' For Bake For Another 45 Minutes
- Allow To Cool For 1 Hr Before Cutting Serve & Enjoy Warm
