Seafood Pasta Salad(Insalata Di Pesca E Pasta)
- 1 lb. fettucine
- 1/2 c. black olives, sliced
- 1/2 c. green pimento olives, sliced
- 1/2 c. mayonnaise
- 1/2 c. yogurt (plain)
- 1 lb. crab meat
- 1 tsp. lemon juice
- 1/4 c. olive oil
- 2 Tbsp. white vinegar
- 1 clove garlic, minced
- salt and pepper to taste
- 1 avocado, cubed
- Cook fettucine according
- to
- package directions; drain well. Combine
- olives,
- mayonnaise
- and
- yogurt.
- Fold
- in crabmeat. Whisk lemon juice,
- oil,
- vinegar, garlic, salt and pepper together.
- Gently fold in avocado cubes.
- Combine olive mixture with fettucini and
- gently
- add oil and vinegar dressing.
- Chill and serve.
- Garnish
- with more olives.
- Makes 4 to 6 servings as main course.
- This is great on a buffet table.
