Ham And Onion Pie
- 2 1/4 cups self rising flour
- 1/2 cup butter chopped
- 3 eggs + 1 egg yolk
- 5 1/4 ounces ham chopped
- 4 ounces cheddar cheese grated
- 8 ounces baby spinach
- 3 ounces sun-dried tomatoes chopped
- 6 onions chopped
- 1/4 cup heavy cream
- Preheat oven to 400u0b0F. Lightly grease an 8 inch pie dish.
- Sift flour into a bowl. Cut in butter until mixture resembles coarse breadcrumbs. Add egg yolk and 1-2 tbsp ice water. Mix until smooth. Wrap in plastic wrap and chill for 20 mins. On a lightly floured surface, roll 2/3 of dough out and use to line prepared pie dish.
- Combine ham, Cheddar, spinach, tomatoes, onions, cream and 2 eggs. Season then transfer to pie shell. Roll out remaining pastry and lay over filling. With a sharp knife, score top in a crisscross pattern. Beat remaining egg and brush over top. Sprinkle with salt and pepper. Bake for 25-30 mins.
