Fried Rice-Style Quinoa

  1. Cook quinoa according to package directions; cook 10 mins.
  2. Meanwhile, cook eggs in 1 TBS hot oil in large nonstick skillet over medium-high heat, stirring often, 2 minutes or just until set. Remove from the skillet.
  3. Add remaining 1 TBS oil to skillet; heat 1 minute. Cook vegetables, quinoa and green onion in hot oil, stirring often, 4-5 minutes or until vegetables are tender and quinoa is slightly browned.
  4. Stir in soy sauce and Sriracha, if desired. Stir in eggs.
  5. Divide mixture evenly among 4 containers.
  6. Note: Cook the quinoa up to 2 days ahead and refrigerate until needed, if desired.
