Hake With An Anchovy Vegetable Sauce
- 1 tablespoon vegetable oil
- 1 onion peeled and chopped
- 1 carrot peeled and chopped
- 1 leek chopped
- 1 garlic clove peeled and minced
- 6 anchovies
- 1 tablespoon tomato puree
- 1 1/4 cups fish stock
- 4 loins hake, or ling cod loins
- salt
- ground black pepper
- Add the vegetable oil to a skillet on low heat and saute the onion, carrot, leek, and garlic for 5 minutes.
- Add the anchovies and cook until they "melt." The anchovies should slowly disappear.
- Add the tomato puree and mix well. Add the stock and simmer for 10 minutes.
- You can either use an immersion blender to puree the sauce until smooth, or leave it chunky.
- Add the hake loins seasoned with salt and black pepper. Cover and cook on low heat until the fish flakes easily, about 10 minutes. Serve with the sauce.
