Applesauce Fruitcake
- 1 1/2 c. sugar
- 1 c. butter/margarine
- 2 tsp. cinnamon
- 1 tsp. cloves
- 1 c. Quaker oats, uncooked
- 2 eggs, beaten
- 1 c. dark raisins
- 1 c. finely chopped dates
- 1 tsp. allspice
- 2 1/2 c. sifted all-purpose flour
- 1 1/2 tsp. soda
- 1 1/2 tsp. salt
- 1/2 c. finely chopped candy cherries
- 1/2 c. finely chopped walnuts
- 2 c. canned sweetened applesauce
- Cream sugar, butter and spices until light and fluffy.
- Sift together flour, soda and salt.
- Reserve 1 cup flour mixture.
- Stir in oats.
- Add flour and oats mixture to creamed mixture alternately with eggs.
- Toss fruits and nuts with reserved cup of flour until well coated.
- Blend applesauce and fruit mixture into batter.
- Pour into greased 10-inch tube pan.
- Bake at 325u0b0 for about 1 1/2 hours.
