Bran Rolls
- 1/2 c. shortening (Crisco)
- 1/2 c. boiling water
- 1/3 c. sugar
- 1/4 to 1/2 tsp. salt
- 1/2 c. wheat bran flakes cereal (I use All-Bran)
- 1 pkg. dry yeast
- 1/2 c. warm water (105~ to 115~)
- 1 egg, beaten
- 3 c. all-purpose flour, divided
- Combine shortening, boiling water, sugar, salt and bran in a medium mixing bowl.
- Stir until shortening is melted; cool to lukewarm.
- Dissolve yeast in warm water.
- Add to bran mixture. Add egg and beat well.
- Add 1 cup flour and beat well.
- Add remaining flour and mix well.
- Cover and place in refrigerator overnight.
- Punch dough down; divide dough into 24 pieces and shape into rolls.
- Place on greased baking sheets.
- Cover and let rise in
- a warm place (85u0b0), free from drafts, until doubled in size.
- Bake at 400u0b0 for 15 to 20 minutes.
- Yield:
- 2 dozen rolls.
