Grilled Pork Spring Roll

  1. Grind pork, double or triple ground.
  2. In a KitchenAid, with a dough hook, combine ground pork with ice water until a Spam texture is achieved. Mix in salt, black and white pepper, curing salt, fish sauce, mung bean starch and red dye.
  3. Form pork mixture into rectangular patties, grill, saute or steam patties until cooked through.
  4. In a rice paper layer picked herbs, one rolled and crispy spring roll wrapper, pickles, shaved onion and cooked pork.
