Grilled Pork Spring Roll
- pork As needed, ground
- cold water
- rice
- salt As needed
- black pepper As needed
- white pepper As needed
- curing salt As needed
- fish sauce As needed
- starch As needed mung bean
- red food dye As needed
- won ton wrappers As needed
- mint As needed, picked
- cilantro As needed, picked
- thai basil As needed, picked
- chinese chives As needed, picked
- spring roll wrapper As needed, rolled and fried
- pickled carrots As needed julienne
- pickled daikon As needed julienne
- onion As needed, shaved
- peanut dipping sauce As needed
- Grind pork, double or triple ground.
- In a KitchenAid, with a dough hook, combine ground pork with ice water until a Spam texture is achieved. Mix in salt, black and white pepper, curing salt, fish sauce, mung bean starch and red dye.
- Form pork mixture into rectangular patties, grill, saute or steam patties until cooked through.
- In a rice paper layer picked herbs, one rolled and crispy spring roll wrapper, pickles, shaved onion and cooked pork.
