Quick Chocolate Pie
- 2/3 pound chocolate sandwich cookies
- 7 tablespoons unsalted butter
- 7/8 cup cream
- 1 bar dark chocolate 70% cocoa
- 3 1/2 tablespoons unsalted butter
- 7/8 cup cream
- 5 chocolate sandwich cookies to garnish
- For the crust, crush cookies and add melted butter.
- Mix well.
- Place mixture in a 20 cm (approximately 8 inches) springform pan.
- Use the back of a spoon to smooth the surface and sides into an even layer.
- Place pie shell in the freezer until ready to fill.
- For the filling, heat cream in a saucepan and bring almost to a boil.
- Remove from heat and add chocolate broken into small pieces and butter.
- Let melt slowly, shaking pan occasionally and stirring with a whisk until the mixture is smooth and shiny.
- Pour filling into pie shell and garnish with cookies on top.
- Refrigerate until filling is set.
- Tip: For best results, prepare pie the day before serving and refrigerate overnight.
- Remove from refrigerator about 30 minutes before serving.
