Lentil And Brown Rice Soup
- 1 envelope Lipton(R) Recipe Secrets(R) Onion Soup Mix
- 4 cups water
- 3/4 cup lentils rinsed and drained
- 1/2 cup regular or convert rice
- 14 1/2 ounces whole peeled tomatoes undrained and coarsely chopped
- 1 carrots
- 1 stalk celery coarsely chopped
- 1/2 teaspoon loosely packed fresh basil leaves
- 1/2 teaspoon dri oregano leaves, crush
- 1/4 teaspoon dri thyme leaves, crush
- 1 tablespoon finely chopped fresh parsley
- 1 tablespoon red vinegar white white, wine,
- 1/4 teaspoon ground black pepper
- 1. In large saucepan or stockpot, combine Lipton(R) Recipe Secrets(R) Onion Soup Mix, water, lentils, uncooked rice, tomatoes, carrot, celery, basil, oregano and thyme. Bring to a boil over high heat. Reduce heat to low and simmer covered, stirring occasionally, 45 minutes or until lentils and rice are tender. Stir in remaining ingredients.
- MICROWAVE DIRECTIONS: In 3-quart casserole, combine Lipton(R) Recipe Secrets(R) Onion Soup Mix, water, tomatoes, carrot, celery, basil, oregano and thyme. Microwave covered at HIGH 12 minutes or until boiling. Stir in lentils and uncooked brown rice* and microwave covered at MEDIUM (50% Full Power), stirring occasionally, 60 minutes or until lentils and rice are tender. Stir in remaining ingredients. Let stand covered 5 minutes.
- *If using uncooked regular rice, decrease 60 minute cook time to 30 minutes.
