Cherry Coconut Cupcakes

  1. Preheat oven to 350F.
  2. Line a muffin pan with liners.
  3. Makes 25 cupcakes.
  4. Or you can do 12 muffins and a nine inch cake.
  5. Butter and line with parchment a 9 inch round.
  6. Cream the butter, coconut oil and the sugar, beat for about five minutes until light and fluffy.
  7. Add eggs, one at a time, until fully incorporated.
  8. Add vanilla extract and red food coloring.
  9. Combine dry ingredients and add the dry mixture into the butter mixture very slowly (otherwise you will get a face full of flour).
  10. Add cherries and coconut, just mix until combined.
