Veal Cutlet Parmesan
- 3/4 cup italian seasoned dry bread crumbs
- 2 tablespoons grated Parmesan cheese
- 1 pound veal cutlets pounded thin
- 2 eggs beaten
- 4 tablespoons olive oil
- 1 jar (1 lb. 8 oz.) Ragu(R) Old World Style(R) Pasta Sauce
- 1/2 cup shredded mozzarella cheese about 2 oz
- Preheat oven to 375u0b0. In large shallow bowl, combine bread crumbs and Parmesan cheese. Dip veal in eggs, then bread crumb mixture.
- In 12-inch nonstick skillet, heat 2 tablespoons olive oil over medium-high heat and brown veal on both sides in two batches; drain on paper towels.
- In 13 x 9-inch baking pan, spread 1/2 cup Pasta Sauce. Arrange veal in pan, then top with remaining 1-1/2 cups Sauce and mozzarella cheese. Bake 10 minutes or until heated through. Serve, if desired, with additional sauce.
