Green Papaya Cole Slaw
- 1 green papaya large, OR 2 small green papaya, seeded and chopped
- 2 cups bok choy OR baby bok choy, chopped
- 1 cup carrots shredded
- 1 red bell pepper cut into julienne strips
- 1/3 cup red onion chopped
- 2 tablespoons fresh cilantro chopped
- 1 tablespoon fresh mint chopped
- 1/4 cup rice vinegar
- 1/4 cup honey
- 2 tablespoons grape seed oil
- 2 teaspoons fresh ginger root grated
- In medium bowl, combine all ingredients (papaya, bok choy, carrots, red bell pepper, red onion, fresh cilantro, fresh mint) except dressing; set aside. In small bowl, combine dressing ingredients (rice vinegar, honey, grape seed oil, ginger root); pour over vegetable mixture. Stir to combine; set aside for at least 15 minutes to allow flavors to develop.
- Garnish with chives or red bell pepper strips.
