Chili Con Carne Burgers
- 1 cup long-grain rice uncooked white
- 1 tablespoon butter or margarine
- 3 stems parsley chopped
- 1 pound ground beef
- 1 roll small bread, torn into small pieces
- 2/3 cup corn frozen or canned drained
- 2 bell peppers seeded and diced
- 1 onion finely diced
- 1 jalapeno pepper seeded and finely chopped
- 1 egg lightly beaten
- 2 teaspoons dijon mustard
- 2 tablespoons chili oil or vegetable oil
- Bring 2 cups of water to a boil in a medium saucepan. Add the rice and return to the boil. Reduce heat, cover and simmer for about 20 mins until all the water is absorbed. Melt the butter in another saucepan, add the rice and parsley and cook, stirring often, for a few mins. Remove from the heat; cover to keep warm.
- Knead together the ground beef, bread, corn, peppers, onion, jalapeno, egg and mustard. Season with salt and pepper, then shape the mixture into eight small patties.
- Heat the chili oil in a large skillet over medium heat. Add the burgers and cook for 4-5 mins per side until cooked through. Serve the burgers on a bed of parsley rice.
