Crispy Fish Pot Pies
- 2 1/2 tablespoons butter
- 1 tablespoon olive oil
- 1 leek finely sliced
- 1 tablespoon all-purpose flour
- 3/4 cup heavy cream
- 1/4 cup white wine
- 1 1/2 pounds fish frozen mixed
- 1 lemon zested and juiced
- 1 pinch saffron
- 1 sweet potato small, peeled, cubed, cooked
- 2 tablespoons fresh dill chopped
- 2 ounces potato chips lightly crushed
- 2 ounces cheese aged, grated
- 2/3 cup dried breadcrumbs
- mixed greens to serve
- Preheat oven to 400u0b0F. Lightly grease 6 - 4.5 oz ramekins. Place on a baking tray.
- In a frying pan, heat butter and oil over high heat. Saute leek for 4-5 mins, until tender. Add flour and cook, stirring, for 1 min. Whisk in cream and wine until smooth then cook, stirring, until mixture boils and thickens. Reduce heat and add fish, lemon and saffron. Simmer for 4-5 mins, until seafood is cooked through. Add sweet potato and dill. Distribute between ramekins.
- Meanwhile, to make the topping, combine potato chips, cheese and breadcrumbs. Sprinkle over seafood and bake for 15-20 mins, until golden and bubbling.
- Serve with mixed greens.
