Easy Spinach Dolmades
- 1 tablespoon olive oil
- 1 onion finely chopped
- 4 garlic cloves crushed
- 7 ounces ground lamb
- 1 teaspoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon Garam Masala
- 1 teaspoon ground turmeric
- 1/3 cup cooked rice cold
- 1/2 cup lemon juice
- 1/4 cup chopped parsley
- 1 tablespoon mint chopped
- 1 tablespoon dill chopped
- 24 spinach leaves large, blanched, stems removed
- lemon wedges
- plain yogurt
- pita bread
- Heat the oil in a large skillet on medium-high heat. Add the onion and garlic and saute for 2-3 mins until tender. Add the ground lamb and spices and cook for 4-5 mins, breaking up lumps with a spoon. Stir in the rice. Set aside to cool.
- Stir in the lemon juice and herbs. Season to taste. Shape level tablespoonfuls of the mixture into log shapes, pressing together firmly. Place a log near the bottom of a spinach leaf. Fold over sides then roll up tightly. Repeat with remaining ingredients. Serve with lemon wedges, yogurt and pita bread.
