Ham And Sweet Potato Frittata
- 7 ounces sweet potatoes peeled, thinly sliced
- 2 tablespoons olive oil
- 1 red onion thinly sliced
- 2 cloves garlic crushed
- 6 medium eggs
- 3/4 cup heavy cream
- 5 1/4 ounces ham chopped
- 2 3/4 ounces frozen peas
- 2 3/4 ounces roasted red pepper jarred, sliced
- 1 tablespoon chives chopped
- salad Arugula, to serve
- Preheat the oven to 350u0b0F. Lightly grease a 6 x 10 inch loaf pan. Line base and sides with parchment paper.
- Place sweet potatoes on a baking sheet; drizzle with half the oil. Bake 10-15 mins, turning once, until tender.
- Meanwhile, heat remaining oil in a large frying pan on high. Saute onion and garlic 3-4 mins, until tender; allow to cool.
- In a large bowl, whisk together eggs and cream, until combined. Stir in ham, peas, pepper, chives and cooked onion and garlic. Season to taste.
- Pour mixture into pan, layering with sweet potato. Bake 30-35 mins. Cool slightly; cut into slices. Serve with arugula salad.
