Spicy Ribs With Fruit Salsa
- 2 1/2 tablespoons honey
- 2 1/2 tablespoons tomato ketchup
- 1 teaspoon sambal oelek
- 8 pork ribs
- 2 tablespoons oil
- 1 onion diced
- 3 garlic cloves crushed
- 1 ounce blanched almonds
- 8 ounces pineapple chunks juice reserved
- 1 tablespoon dried oregano
- 1 pinch ground cloves
- 1 teaspoon dried thyme
- 1 pinch cayenne pepper
- 1 cinnamon stick
- 14 1/2 ounces chopped tomatoes
- 2 bananas sliced
- 1 tablespoon lemon juice
- 1 pinch sugar
- Preheat the oven to 400u0b0F. Mix the honey, ketchup and sambal oelek together and season. Coat the ribs with sauce. Place the ribs on a baking sheet covered in foil and bake for 35-40 mins, turning half way through.
- Heat the oil in a pan, add the onion, garlic and almonds and saute for 3-4 mins. Add the pineapple, oregano, cloves, thyme, cayenne pepper and cinnamon and season. Mix in the tomatoes and juice from the pineapple. Simmer for 8-10 mins. Fold in the bananas, lemon juice and sugar and season. Divide the ribs and sauce between 4 plates and serve.
