Vegan Fruit Cake

  1. Heat oven to 325 degrees. Boil first 8 ingredients together for 3 minutes. Allow to cool. Sift cake flour before measuring; re-sift with baking powder and soda. Stir flour mixture gradually into other mixture. Add chopped nuts and fruit. Bake in greased tube pan for 1 hour. When cool, sprinkle with powdered sugar or ice with a citrus glaze.
  2. Mix above ingredients until smooth. Drizzle over cake.
