Vegan Fruit Cake
- 1 cup water or beer
- 2 cups raisins
- 1 cup brown sugar packed
- 1 cup butter
- 1/2 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon salt
- 1/8 teaspoon nutmeg
- 2 cups cake flour
- 1 teaspoon double-acting baking powder
- 1 teaspoon baking soda
- 1 cup chopped nuts
- 1 cup dried fruits chopped, or apples
- 1 1/4 cups confectioner's sugar
- 1/4 cup lemon orange or lime
- 1 teaspoon vanilla extract
- Heat oven to 325 degrees. Boil first 8 ingredients together for 3 minutes. Allow to cool. Sift cake flour before measuring; re-sift with baking powder and soda. Stir flour mixture gradually into other mixture. Add chopped nuts and fruit. Bake in greased tube pan for 1 hour. When cool, sprinkle with powdered sugar or ice with a citrus glaze.
- Mix above ingredients until smooth. Drizzle over cake.
