Spiralized Golden Beets With Vegan Almond Mint Sauce
- 2 golden beets medium sized, peeled
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- chopped almonds
- fresh basil
- 1/2 cup slivered almonds raw, blanched, soaked for 3 hours in 1 cup of filtered water
- 1/2 cup water filtered
- 2 cloves garlic chopped
- 1 tablespoon olive oil
- 12 mint leaves roughly chopped
- 3 tablespoons fresh lemon juice
- 1/4 teaspoon salt
- Attach your KitchenAid(R) Spiralizer (using the fine spiralizing blade) to the power hub of your Stand Mixer. Fit your golden beet onto the Spiralizer. Set the Stand Mixer to speed 1, then increase to speed 3. Set the finished noodles aside.
- To make the sauce, drain and rinse almonds. Add to a blender, along with an additional 1/2 cup water and the rest of the sauce ingredients. Blend for 40 seconds, on high, until completely smooth. Stir down sides and reblend for 15 more seconds. Taste and adjust salt as needed.
- Heat your KitchenAid(R) 8" Skillet to medium heat. Add olive oil and saute the noodles with salt, until just cooked through, about 6 minutes.
- Plate the noodles and add a liberal amount of sauce. Finish with fresh basil and toasted almonds.
