Mixed Cheese Quiche
- 1 pastry dough round sheet of puff
- 1 3/4 cups semi-hard cheeses or mixed hard, fontina, asiago, montasio
- 3 1/2 ounces mortadella one thick slice
- 2 eggs
- 7/8 cup heavy cream
- 1/2 cup milk
- 1 cup grated Parmesan cheese
- salt and ground black pepper as needed
- Preheat the oven to 190C.
- Line a pie plate with wax paper and add the puff pastry crust.
- Cut the cheeses and mortadella into small pieces and combine them in a bowl.
- Spread them over the pie crust.
- Beat the eggs, the heavy cream, the milk, the grated cheese, the salt and the pepper in a bowl and pour over the cheese and mortadella pieces in the pie crust.
- Bake for approximately 25 minutes, turn the broiler on during the last 5 minutes.
- Remove the quiche from the oven and serve warm.
