Sweet Potato Chicken Pie
- 36 ounces yams drained or 3 fresh cooked yams
- 1/2 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1/4 teaspoon salt optional
- 2 tablespoons butter melted
- 1 tablespoon sherry optional
- 2 tablespoons butter
- onion 1 med., sliced or minced
- 6 ounces sliced mushrooms drained
- olives 1/2 cup quartered lg. stuffed, optional
- 1 can cream of mushroom or Dash of pepper
- 2 cups cooked chicken cubed
- Mash soft yams well adding spices with melted butter and sherry. Line a 9 inch pie plate, building up the edges.
- Saute minced onion in skillet with butter until tender. Add mushrooms with their liquid and the remaining ingredients, stirring occasionally. Pour mixture into yam pie crust. Bake 30 minutes in 350 degree oven.
