Chili Pork Stir Fry
- 1 tablespoon vegetable oil
- 1 1/3 pounds pork thinly sliced
- 1 onion peeled and cut into wedges
- 1 carrot peeled, halved lengthways, thinly sliced diagonally
- 2 stalks celery sliced
- 3 1/2 ounces green beans trimmed, cut in half diagonally
- 1/4 cup sweet chili sauce
- 2 tablespoons fish sauce
- 1 lime juiced
- 2 teaspoons brown sugar
- 1/2 cup peanuts crushed
- 1/3 cup cilantro chopped, plus extra to serve
- cooked rice to serve
- Heat half of the oil in a wok or large frying pan over a medium heat. Stir-fry the pork, in batches, for 1-2 mins, until browned. Transfer to a bowl.
- Add the remaining oil to the wok and heat. Stir-fry the onion, carrot and celery for 2-3 mins, until softened. Add the pork and beans and stir-fry for 2-3 mins, until the beans are just tender.
- Whisk together the sweet chili sauce, fish sauce, lime juice and sugar. Add to the wok and stir-fry for 1-2 mins, until heated through. Remove from the heat.
- Add the peanuts and cilantro and toss to combine. Serve with rice and extra cilantro, if desired.
