Vegetable Strata
- 2 slices bread, cubed
- 1/2 c. julienne carrots strips
- 1/2 c. sliced zucchini
- 1/4 c. chopped onion
- 1 clove garlic, minced
- 2 tsp. polyunsaturated margarine
- 8 oz. carton egg substitutes
- 1/2 tsp. dried basil leaves
- 1/4 c. shredded part skim Mozzarella cheese
- Place bread cubes in bottom of a greased 8 x 8 x 2-inch baking pan.
- Set aside; in nonstick skillet, saute carrots, onions, zucchini and garlic in margarine until tender.
- Stir in tomato. Cook 1 to 2 minutes more; spoon over bread cubes.
- Blend egg substitute, milk and basil; pour over vegetables in pan.
- Bake at 375u0b0 for 40 to 45 minutes or until knife inserted in center comes out clean.
- Sprinkle with cheese during last 5 minutes of baking. Makes 6 servings. 85 calories; 149 mg. sodium; 2 grams fat per serving.
