Vegetable Strata

  1. Place bread cubes in bottom of a greased 8 x 8 x 2-inch baking pan.
  2. Set aside; in nonstick skillet, saute carrots, onions, zucchini and garlic in margarine until tender.
  3. Stir in tomato. Cook 1 to 2 minutes more; spoon over bread cubes.
  4. Blend egg substitute, milk and basil; pour over vegetables in pan.
  5. Bake at 375u0b0 for 40 to 45 minutes or until knife inserted in center comes out clean.
  6. Sprinkle with cheese during last 5 minutes of baking. Makes 6 servings. 85 calories; 149 mg. sodium; 2 grams fat per serving.
