Vegetarian Pastitsio

  1. Spray a large skillet with cooking spray; heat over medium heat until hot.
  2. Saute protein crumbles and onion until onion is tender, 5 - 8 minutes.
  3. Stir in tomato paste and water; cook 2 - 3 minutes longer. Season to taste with salt and pepper.
  4. Spoon half the macaroni into a 9" x 13" x 2" baking pan; spoon protein crumbles mixture over macaroni. Combine cheese and spices; sprinkle over casserole. Spoon remaining macaroni over the top.
  5. Heat milk and margarine in medium saucepan, stirring until margarine is melted. Whisk about half the mixture into the eggs; wish egg mixture back into milk. Pour over macaroni.
  6. Bake, uncovered, until casserole is bubbly, about 50 - 60 minutes.
  7. Sprinkle with parsley.
