Vegetarian Pastitsio
- 12 ounces recipe crumbles Morningstar Farms
- 1 cup chopped onion
- 8 ounces tomato paste
- 2 cups macaroni cooked
- 1 cup fat-free Parmesan cheese
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 cup skim milk
- 2 tablespoons margarine
- 4 eggs lightly beaten
- parsley minced, for garnish
- Spray a large skillet with cooking spray; heat over medium heat until hot.
- Saute protein crumbles and onion until onion is tender, 5 - 8 minutes.
- Stir in tomato paste and water; cook 2 - 3 minutes longer. Season to taste with salt and pepper.
- Spoon half the macaroni into a 9" x 13" x 2" baking pan; spoon protein crumbles mixture over macaroni. Combine cheese and spices; sprinkle over casserole. Spoon remaining macaroni over the top.
- Heat milk and margarine in medium saucepan, stirring until margarine is melted. Whisk about half the mixture into the eggs; wish egg mixture back into milk. Pour over macaroni.
- Bake, uncovered, until casserole is bubbly, about 50 - 60 minutes.
- Sprinkle with parsley.
