Lemon Cookies
- 4 1/2 c. unsifted flour
- 1 tsp. baking soda
- 1 tsp. cream of tartar
- 1 tsp. salt
- 1 c. salad oil
- 1 c. oleomargarine
- 1 c. confectioners sugar
- 1 c. granulated sugar
- 2 eggs
- 1 tsp. lemon extract
- 1 tsp. lemon peel
- Combine dry ingredients.
- In a large bowl, cream oleo and both sugars.
- Beat in eggs until light and fluffy.
- Add salad oil, lemon extract and peel.
- Beat well until blended.
- Add dry ingredients and mix well.
- Chill in covered bowl in refrigerator overnight.
- Grease cookie sheets, roll 1 teaspoon dough into a ball and flatten into a circle with glass dipped in granulated sugar.
- Bake about 10 minutes in a 350u0b0 oven.
- Let stand 2 to 3 minutes before removing from cookie sheet.
