Lemon Cookies

  1. Combine dry ingredients.
  2. In a large bowl, cream oleo and both sugars.
  3. Beat in eggs until light and fluffy.
  4. Add salad oil, lemon extract and peel.
  5. Beat well until blended.
  6. Add dry ingredients and mix well.
  7. Chill in covered bowl in refrigerator overnight.
  8. Grease cookie sheets, roll 1 teaspoon dough into a ball and flatten into a circle with glass dipped in granulated sugar.
  9. Bake about 10 minutes in a 350u0b0 oven.
  10. Let stand 2 to 3 minutes before removing from cookie sheet.
