Vegetable-Beef Bolognese
- 2 tablespoons promise buttery spread
- 5 carrots large, finely chopped (about 2 cups)
- 1 zucchini large, finely chopped (about 2 cups)
- 1 red bell pepper, sliced
- 1 sweet onion
- 8 ounces white mushrooms
- 1/2 pound sirloin steak
- 1/2 teaspoon salt
- 28 ounces crushed tomatoes in puree thick
- 14 1/2 ounces beef broth fat free reduced sodium
- 1 pound penn pasta, cook and drain whole grain
- Melt Promise(R) Buttery Spread in large saucepot over medium-high heat and cook carrots, zucchini, red pepper, onion and mushrooms 8 minutes or until tender and just beginning to brown. Stir in ground sirloin and salt and brown, stirring occasionally. Add tomatoes and broth. Bring to a boil over high heat. Reduce heat to low and simmer 30 minutes. Serve over hot penne.
