Ginger Chicken Noodles

  1. Heat a large frying pan over high heat. Lightly coat chicken with olive oil and season. Cook for 2-3 mins per side, or until cooked through. Let cool slightly then slice into strips. Combine with noodles and vegetables.
  2. Meanwhile, to make the dressing, whisk together all ingredients. Drizzle 1/2 over chicken salad and toss to combine. Drizzle remaining dressing over top and sprinkle with cilantro to serve.
