Ginger Chicken Noodles
- 2 chicken breasts halved horizontally
- 9 ounces soba noodles cooked
- 5 1/4 ounces snow peas trimmed, sliced
- 1 carrot peeled, julienned
- 2 stalks celery julienned
- 3 spring onions sliced
- dressing
- 2 tablespoons avocado oil
- 2 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoons pickled ginger finely shredded
- 1 teaspoon wasabi paste
- 1 teaspoon sesame oil
- cilantro leaves fresh, to serve
- Heat a large frying pan over high heat. Lightly coat chicken with olive oil and season. Cook for 2-3 mins per side, or until cooked through. Let cool slightly then slice into strips. Combine with noodles and vegetables.
- Meanwhile, to make the dressing, whisk together all ingredients. Drizzle 1/2 over chicken salad and toss to combine. Drizzle remaining dressing over top and sprinkle with cilantro to serve.
