Spaghetti Bake With Bacon And Tomatoes
- 3 onions finely diced
- 7 ounces smoked streaky bacon chopped
- 2 tablespoons tomato puree
- 3 teaspoons dried oregano
- 1 teaspoon dried thyme
- 2 cans chopped tomatoes 400g each
- 1 pinch caster sugar
- 7/8 pound spaghetti
- 1 1/8 cups mozzarella sliced
- 1/2 cup Parmesan grated
- fresh thyme to garnish
- Preheat the oven to 350u0b0F. Cook the bacon in a large, deep nonstick skillet over medium heat until crisp. Remove and set aside. Add the onions to the skillet and cook for 5-6 mins until softened. Stir in the tomato paste, oregano and dried thyme and cook, stirring, for 1 min. Stir in the diced tomatoes and sugar. Season with salt and pepper and simmer for 10 mins until the flavors have blended.
- Meanwhile, cook the spaghetti according to the package directions until just tender. Drain well, add to the sauce and toss gently to combine. Transfer the mixture to a large baking dish. Arrange the mozzarella on top and sprinkle with the Parmesan. Bake for 35-40 mins until bubbling. Serve garnished with thyme, if desired.
