Mexican Curry

  1. In 12 inch skillet, brown soy burgers or meat and onion, then drain.
  2. Add tomato sauce and water.
  3. Add spices, mix well and bring to a boil.
  4. Add rice, stir and cover.
  5. Simmer, stirring occasionally, until the water is absorbed, about 30 minutes.
  6. To serve, cover the bottom of a plate with corn chips.
  7. Scoop about 1/2 cup of the curry on top.
  8. Add toppings such as cheese and lettuce to taste.
