Mexican Curry
- 12 burgers OR 3 pounds ground beef
- 1 onion medium, diced
- 24 ounces tomato sauce
- 24 ounces water
- 1 tablespoon oregano
- 1 tablespoon garlic salt
- 1 tablespoon chili powder
- 1 tablespoon cumin seed whole
- 1 teaspoon pepper each, salt, optional
- 2 cups white rice not minute rice
- Fritos Corn Chips
- shredded cheese
- shredded lettuce
- diced tomatoes
- olives
- green chilies
- chopped cilantro
- In 12 inch skillet, brown soy burgers or meat and onion, then drain.
- Add tomato sauce and water.
- Add spices, mix well and bring to a boil.
- Add rice, stir and cover.
- Simmer, stirring occasionally, until the water is absorbed, about 30 minutes.
- To serve, cover the bottom of a plate with corn chips.
- Scoop about 1/2 cup of the curry on top.
- Add toppings such as cheese and lettuce to taste.
