Caramel Apple Cake
- 2 1/2 cups caster sugar
- 2/3 cup softened butter
- 8 cups apples peeled, cored and chopped
- 3 tablespoons lemon juice
- 1 lemon zested
- 1 pinch salt
- 3 eggs
- 2 3/8 cups plain flour
- 2 teaspoons baking powder
- 5 tablespoons apple schnapps
- 7 tablespoons soured cream
- 2 tablespoons slivered almonds
- Preheat oven to 400u0b0F. Grease a 10 inch springform pan. Caramelize 2/3 cup sugar in a frying pan until golden. Remove from heat and add 1 tbsp butter, until melted. Spread evenly over base of prepared pan and top with chopped apples. Set aside.
- Meanwhile, cream remaining butter, remaining sugar, lemon zest and 1 pinch of salt. Whisk in eggs, 1 at a time. Sift flour and baking powder together and mix into batter, alternately with apple schnapps and sour cream. Pour over apples, smooth surface and bake for 30-40 mins. Allow to cool for 15 mins then transfer to a serving plate. Sprinkle with almonds.
