Minute Steak Sandwiches
- 3 tablespoons olive oil
- 1 onion sliced into rings
- 14 ounces minute steaks
- sauce
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon horseradish cream
- 4 rolls bread split horizontally
- 3 ounces baby arugula
- 1 large tomato sliced
- french fries oven-baked, to serve, optional
- In large frying pan, heat 2 tbsp oil over medium heat. Saute onion for 6-8 mins, stirring occasionally, until golden. Set aside.
- Increase heat to high. Brush steaks with remaining oil and season. Sear for 1 min per side. Let rest, covered, for 2 mins.
- Meanwhile, to make the sauce, combine sour cream, mayonnaise and horseradish. Season.
- Fill rolls with arugula, tomato and steaks. Top with onions and sauce. Serve with fries, if desired.
