Apple, Blueberry And Pecan Bread
- 2 1/2 cups flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1 1/4 cups granulated sugar
- 2 Granny Smith apples peeled, cored and grated
- 2/3 cup chopped pecans toasted
- 8 tablespoons butter melted
- 2 eggs lightly beaten
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 pint blueberries
- 2 teaspoons demerara sugar
- butter to serve
- Preheat the oven to 350u0b0F. Lightly grease and line bottom and sides of two 8 x 4 inch loaf pans. Sift flour, baking powder and cinnamon into a large bowl. Stir in sugar, apples and pecans (reserve 2 tbsp of pecans for topping).
- Mix butter, eggs, milk and vanilla in a medium bowl. Stir into dry ingredients until combined. Gently stir in blueberries. Pour mixture into loaf pans. Sprinkle with demerara sugar and reserved pecans.
- Bake for 30-35 mins, until a toothpick inserted into center comes out clean. Cool in pan for 5 mins. Remove from pans; cool on a wire rack. Serve bread warm or toasted with butter.
