Apple, Blueberry And Pecan Bread

  1. Preheat the oven to 350u0b0F. Lightly grease and line bottom and sides of two 8 x 4 inch loaf pans. Sift flour, baking powder and cinnamon into a large bowl. Stir in sugar, apples and pecans (reserve 2 tbsp of pecans for topping).
  2. Mix butter, eggs, milk and vanilla in a medium bowl. Stir into dry ingredients until combined. Gently stir in blueberries. Pour mixture into loaf pans. Sprinkle with demerara sugar and reserved pecans.
  3. Bake for 30-35 mins, until a toothpick inserted into center comes out clean. Cool in pan for 5 mins. Remove from pans; cool on a wire rack. Serve bread warm or toasted with butter.
