Chicken Manicotti
- 8 manicotti shells
- 2 c. cooked, boneless, skinless chicken breasts
- 1/2 c. nonfat sour cream
- 1 can Healthy Request cream of mushroom soup
- 2 Tbsp. Health Valley no salt chicken broth
- 1/4 c. onion
- 4 oz. fresh mushrooms
- 1 c. no fat Cheddar or Monterey Jack cheese
- Preheat oven to 350u0b0.
- Cook shells according to box directions.
- Cut up chicken.
- Combine sour cream and soup and divide into 2 equal amounts.
- Add chicken to 1/2 of soup mixture. Stuff shells with this mixture and place in baking dish.
- Saute onion and mushrooms in chicken broth until tender, then add to remaining soup mixture.
- Pour over stuffed shells.
- Bake at 350u0b0 for 15 minutes.
- Sprinkle cheese over top and bake 5 more minutes or until cheese is melted.
