Spinach, Brown Bread And Eggs
- 2 eggs
- 1 handful spinach washed
- 1 sprig thyme
- 1 teaspoon olive oil
- 1 teaspoon corriander
- 1 teaspoon basil
- 1 onion
- 2 cloves garlic
- 4 slices whole wheat bread
- Start to boil the spinach and add the sprig of thyme
- Add the oil to a frying pan. Heat at 3/4 max temperature
- Chop up the onion and garlic cloves
- I used one half of the pan for eggs and one half to fry the onions. Once the eggs are cooked, you can move that part of hte pan off the heat, but keep the heat on the onions.
- Add the onions and chopped garlic cloves to the other half of the pan.
- Add the eggs to the other half. N.B. cook them over easy, or to your taste
- Add the basil and corriander on top of the onion and garlic. negin toasting the bread
- From here, wait until the onions are softened, and try to keep your eggs cooking to your likeing.
- Taste the spinach to see if it is done. If so, pour out the water and add the spinach and sprig of thyme on top of the onions and garlic and mix.
- Once the eggs and bread are done, put the bread on a plate, and put the eggs on top of the bread
- Once the spinach is nicely mixed with the onions, and hopefully before all the water is boiled off (some boiled off is good), place the mix on top of your eggs.
