Chocolate Biscuit Cake
- biscuits plain, petit beurre 4-5 packages
- 7/8 cup milk
- 1 cup sugar
- 2 1/8 cups milk
- 4 tablespoons cornstarch
- 7/8 cup dark chocolate or milk chocolate
- 7/8 cup butter or margarine
- rum
- coconut
- ground nuts
- Put 300 ml milk and sugar in a saucepan over low heat (if you have a pan with double bottom cos it does not stick the cream)
- In a bowl mix the remaining milk with 4 tablespoons of starch, mixing well with a whisk to dissolve better the starch.
- When the milk is hot, mix it with the one with starch and continue boiling the cream,stiring constantly with the whisk, until thickened like a pudding.
- Remove from the heat and then melt chocolate in the microwave, about 2 minutes (check it every 30 seconds), then incorporate it into the cream and blend it well. At the end, add 1 teaspoon rum (optional).
- Let the cream to cool (finger temperature), then mix the soft butter with electric mixer and gradually incorporate it in cream, then you can assemble the cake.
- In a bowl put milk (200 ml) to dip the cookies.
- Prepare a dish (rectangular or square, or even a tray) and place one layer of biscuits soaked in milk (I'm soaked 2-3 seconds).
- Put a layer of biscuits, then cream (3-4 tablespoons each layer) and continue so until cream finish. I had the last layer of cream (4 layers of biscuits and 4 of cream ).
- Level the surface then ornate it with coconut and nuts on the side.
