Tofu And Vegetable Stir-Fry

  1. Heat oil in a wok or large frying pan over high heat. Stir-fry garlic and ginger for 20 seconds, or until golden. Add vegetables and tofu. Stir-fry for 1-2 mins. Add stock, sweet soy sauce and light soy sauce. Simmer for 1-2 mins, or until vegetables are just tender. Remove from heat. Add spring onions. Sprinkle with nuts and serve with brown rice and lime wedges.
