Beef And Tomato Quiche
- 2 tablespoons oil
- 12 ounces ground beef
- 1/3 pound onion chopped
- 1 bunch spring onions finely sliced
- 3/4 cup tomatoes chopped
- 1 pound cherry tomatoes halved
- 2 eggs
- 1 cup sour cream
- 1 pound pizza dough
- 2 ounces green olives drained and chopped
- 2 tablespoons whole milk or 2%
- Preheat oven to 400u0b0F. Grease a 9 1/2 inch pie dish. Heat oil and brown meat for 4 mins. Add onion and cook for 3-4 mins then add spring onions and tomatoes and simmer for 2-3 mins. Remove from heat, season and set aside. Mix eggs with 1/2 cup sour cream, season and set aside.
- Roll out, then line prepared pie dish with pizza dough. Press dough into edges then fill with tomato mixture. Pour egg mixture over top and bake on bottom rack for 10-15 mins then cover with foil and bake for another 10 mins.
- To serve, mix olives with remaining sour cream and milk and serve on the side with quiche.
