Delicious Wheat Ceviche
- 2 cups wheat
- water
- salt
- 1 onion finely chopped
- 9 limes
- 3 tomatoes chopped
- 2 bell peppers finely diced
- 3 carrots finely chopped
- 1/2 bunch coriander chopped
- serrano chili seeded and deveined
- 2 avocados ripe, sliced
- tostada shells
- Soak the wheat overnight in 4 cups water.
- The following day, change the water and cook in water with salt for 40 minutes. Strain and let it cool.
- Separately, place the onion and the juice of 3 limes in a small bowl to marinate for 1 hour.
- Place the wheat in a large bowl. Add the tomato, bell pepper, carrot, coriander, chili, and the rest of the lime juice. Mix.
- Remove the onion from the lime juice it has marinated in and add the lime juice to the wheat mixture. Add salt as needed.
- Add the avocado slices and mix carefully. Place on tostada shells and serve.
