Chorizo Saltimbocca

  1. Season pork chops with salt and pepper. Skewer each piece of meat with a slice of chorizo and a sage leaf.
  2. Heat a little oil in a large skillet on medium-high heat. Fry the lemon slices for 1-2 mins. Remove and set aside. Heat 1-2 tbsp oil in the skillet and add the pork in batches, cooking on both sides for 2-3 mins. Remove from the pan and cover with foil to keep warm.
  3. Heat 1 tbsp oil in the skillet. Add the garlic and shallots; cook and stir for 2 mins. Add the squash and thyme; cook and stir for another 1-2 mins. Season to taste with salt and pepper. Serve with the pork and lemon slices.
