Salted Cake With Sausage And Mushrooms

  1. Filling Preparation:
  2. Heat a little olive oil in a skillet over medium heat.
  3. Add onion, garlic cloves and coriander and stir until lightly browned.
  4. Rinse, dry and thinly slice the mushrooms. Slice peppers into strips. Add mushrooms and peppers to pan.
  5. Once mushrooms are cooked add the salpicao and stir to combine.
  6. Let cook until no juices are left in the skillet.
  7. Set aside.
  8. While the filling cools, heat oven to 180u0b0C (approximately 350u0b0F).
  9. Grease and flour a round cake pan and set aside.
  10. Batter Preparation:
  11. Mix the eggs, oil, milk and a pinch of salt. Stir well.
  12. Add the flour and the baking powder. Mix well.
  13. Place half of the batter into the pan.
  14. Top with sausage/mushroom filling.
  15. Cover with the remaining batter and bake in preheated oven for about 40 minutes until brown. Check for doneness (as if it were a cake), remove from the oven and unmold.
