Zippy Squash Casserole
- 5 large yellow squash
- 2 Tbsp. Molly McButter with bacon
- 1 c. (4 oz.) low-fat shredded Cheddar cheese
- 3/4 c. chopped green onion
- 1 medium red pepper, chopped
- 1/2 tsp. curry
- 1/4 tsp. garlic powder
- 1/8 tsp. pepper
- 1/2 c. soft 40 calorie bread crumbs
- regular Molly McButter
- Wash squash thoroughly.
- Trim off ends.
- Place in boiling water and cook 15 to 20 minutes or until tender.
- Drain and mash. Combine next 7 ingredients; add squash, stirring well.
- Spoon squash mixture into 1 1/2-quart casserole (sprayed with Pam). Sprinkle bread crumbs over squash mixture, then sprinkle with Molly McButter.
- Bake at 350u0b0 for 20 minutes.
- Yield:
- 4 to 6 servings.
