Pastitsio
- 3 1/2 tablespoons butter
- 1 tablespoon oil
- 2 onions medium, finely chopped
- 2 1/4 pounds ground beef
- 13 1/2 ounces chopped tomatoes
- 2 tablespoons tomato puree
- 4 1/2 ounces cheddar cheese grated
- 18 ounces pasta large tube, such as rigatoni or penne
- 4 1/2 tablespoons butter
- 5 tablespoons flour
- 4 cups milk
- 2 eggs lightly beaten
- 2 ounces cheddar cheese grated
- Preheat oven to 375u0b0F. Grease a large baking dish.
- Melt butter and oil in a large frying pan over medium heat. Add onions. Cook for 3-4 mins, stirring, until softened. Add ground beef. Cook for 5 mins, until browned. Add tomatoes and tomato puree. Season. Cook over low heat, partially covered, for 35-40 mins, until ground beef is very tender. Add Cheddar.
- Meanwhile, cook pasta in boiling salted water until al dente. Drain.
- To make the white sauce, melt butter in a saucepan over medium heat. Add flour and cook for 2 mins. Gradually whisk in milk. Cook for 5 mins, until sauce is smooth and slightly thickened. Add eggs and Cheddar.
- Transfer 1/2 of the pasta to prepared dish. Cover with 1/2 of the ground beef mixture. Repeat. Top with white sauce. Bake for 30-40 mins, until golden. Serve.
