Chocolate Banana Bread
- 30 wafers Andes Creme de Menthe
- 2 cups flour
- 3/4 cup sugar
- 1 teaspoon baking soda
- 1/4 teaspoon nutmeg
- 1/8 teaspoon ground cloves
- 2 bananas very ripe, mashed
- eggs 2 lg., lightly beaten
- 1/2 cup vegetable oil
- 1/4 cup orange juice
- 2 cups raisins dark or golden
- 1 cup chopped pecans
- Melt Andes. Preheat oven to 325 degrees. Grease and flour two 3 1/2 x 7 inch loaf pans.
- In large mixer bowl, stir together dry ingredients through cloves. Add the mashed bananas, eggs, oil and orange juice and stir to combine well.
- Add melted Andes and beat to combine thoroughly. Stir in raisins and pecans.
- Pour into prepared loaf pans. Set pans on baking sheet and bake.
