Sweet Potato And Tomato Stew
- 1 tablespoon olive oil
- 1 onion small, peeled and finely chopped
- 1 tablespoon tomato puree
- 4 cups vegetable stock
- 2 sweet potatoes medium, peeled and cubed
- 1 yellow pepper large, deseeded and roughly chopped
- 1 medium zucchini cubed
- 1 bay leaf
- 1 sprig fresh rosemary plus more small sprigs to serve
- 1 pound beefsteak tomatoes cubed
- 1 red chili pepper small, deseeded and finely chopped
- Heat the oil in a saucepan and cook the onion until golden. Add the tomato puree and cook 30 seconds. Pour in the stock and bring to a boil. Add the sweet potatoes, pepper, zucchini, bay leaf and rosemary and simmer 15 mins. Add the tomatoes and chili pepper and simmer 5 mins. Serve in bowls with the extra rosemary sprigs.
